Preheat oven to 400°F.
Line a baking sheet with parchment. Place puff pastry on the sheet and lightly score a ½-inch border around the edges without cutting all the way through, then prick the center with a fork. Sprinkle about 1 tablespoon of sugar and almond flour, if using, on the center of the pastry.
Arrange apricot halves cut side up, using quarters is especially large, over the pastry, keeping them inside the border. Sprinkle evenly with remaining sugar.
Brush the border with egg wash and bake for 25–30 minutes, until the pastry is deeply golden and puffed and the apricots are soft and caramelized.
Warm the apricot preserves with a splash of water or lemon juice until smooth, then brush over the warm tart for a glossy finish.
Slice and serve warm or at room temperature with vanilla ice cream or crème fraiche.
Add a light sprinkle of flaky sea salt over the apricots before baking to heighten their sweetness.
Add a few fresh thyme sprigs scattered over the fruit before baking for a subtle herbal note.
