Ingredients
  • 1 whole spatchcock chicken (about 3½ to 4 pounds), plain or rosemary garlic seasoned
  • 1-2 delicata squash, halved, seeded and sliced into ½-inch half moons
  • 1 ½ pounds mini potatoes, halved if large
  • 1 whole head garlic, top trimmed to expose the cloves
  • 4 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon chopped fresh rosemary
  • Kosher salt and ground black pepper
  • Lemon wedges, for serving (optional)

Preparation
STEP 1

Preheat oven to 425°F. Line a large, rimmed sheet pan with parchment paper for easy cleanup if desired.

STEP 2

In a large bowl, toss the squash and potatoes with the olive oil, maple syrup, rosemary, salt, and pepper. Spread the vegetables in an even layer on the sheet pan, leaving space in the center for the chicken. Place the garlic head, cut-side up, on the pan. Drizzle the exposed cloves with a little olive oil and season lightly with salt and pepper.

STEP 3

Pat the chicken dry if needed. If using a plain chicken, season generously with salt and pepper. Place the chicken skin-side up in the center of the pan, nestling the vegetables around it.

STEP 4

Roast for 45 to 55 minutes, stirring the vegetables once halfway through, until the chicken reaches 165°F in the thickest part of the breast and thigh and the vegetables are tender and caramelized. If desired, broil for 2 to 3 minutes to crisp the skin.

STEP 5

Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables. Squeeze the softened roasted garlic over the chicken, potatoes, and squash, and finish with a squeeze of fresh lemon juice if desired.

Options

Delicata squash doesn't need to be peeled, making this recipe especially easy. Butternut or acorn squash are delicious substitutes, just peel the butternut before slicing (or let our Fresh Prep do it for you).

Swap in hearty vegetables like Brussels sprouts, carrots, or sweet potatoes depending on the season.
