Ingredients
- 1 pound dried spaghetti, linguine or fettuccine
- 2 tablespoons olive oil
- 4 garlic cloves, chopped
- 1 teaspoon red chile flakes
- 1 red wine (Zinfandel or Italian blends work well)
- 1 teaspoon salt
- 1 cup grated Parmesan or Romano cheese
- ½ cup chopped Italian parsley
- Additional salt and black pepper to taste
- 453.59g dried spaghetti, linguine or fettuccine
- 25.56g olive oil
- 4 garlic cloves, chopped
- 4.26g red chile flakes
- 1 red wine (Zinfandel or Italian blends work well)
- 4.26g salt
- 236.59ml grated Parmesan or Romano cheese
- 118.29ml chopped Italian parsley
- Additional salt and black pepper to taste
As beautiful as it is tasty, this dish is a must for wine lovers. Pair with a protein and a vegetable or salad, or just enjoy it on its own!
Preparation
STEP 1
Bring a large pot of salted water to a boil. Add pasta and stir gently. Cook 3-4 minutes, stirring occasionally, until pasta is softened but not fully cooked. Drain and set aside, reserving 1/2 cup pasta water.
STEP 2
Return empty pot to the stove. Over medium-high heat add the oil, garlic and chile flakes. Stir until beginning to brown, then add the wine, salt and pasta. Bring to a boil. Reduce heat and simmer, stirring frequently, until pasta is fully cooked and all liquid has been absorbed. If additional liquid is needed to complete cooking of pasta, use the reserved pasta water.
STEP 3
Portion onto plates or bowls and top with grated cheese and chopped parsley and serve.
