Ingredients
- 12 ounces shredded pepper jack cheese
- 2 Roma tomatoes, seeded and diced
- 1 (3.8-ounce) can sliced olives, drained
- 3 tablespoons red wine vinegar
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons finely diced red onion
- Salt and pepper to taste
- 2 avocados, diced
- 340.19g shredded pepper jack cheese
- 2 Roma tomatoes, seeded and diced
- 1 (3.8-ounce) can sliced olives, drained
- 38.34g red wine vinegar
- 38.34g chopped fresh cilantro
- 25.56g extra-virgin olive oil
- 25.56g finely diced red onion
- Salt and pepper to taste
- 2 avocados, diced
This recipe is a great alternative to guacamole – the avocado and pepper jack carry the flavors, while the red onion, cilantro and red wine vinegar add bright, sharp flavor!
Preparation
STEP 1
Mix all ingredients except avocado in a bowl.
STEP 2
Once these ingredients are thoroughly mixed, fold in avocado to incorporate. Chill until ready to serve.
Serve with tortilla chips or as an added filling for tacos and burritos.
