This appetizer is so fun and so easy - get this made the day before and let it chill overnight so you can enjoy yourself!
Ingredients
  • 1 pound peeled, deveined, tail-on shrimp (raw or cooked)
  • ½ red onion, sliced
  • ½ carrot, thinly sliced into rounds
  • 1 lemon, thinly sliced
  • ½ small bulb fennel, sliced (fronds included)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh dill
  • 2 sprigs parsley
  • 2 cloves garlic, halved
  • 1 tablespoon capers (juice included)
  • ½ cup cider vinegar or white wine vinegar
  • ¼ cup olive oil
  • Salt to taste
  • Pinch white pepper
  • Pinch red pepper flakes
  • 453.59g peeled, deveined, tail-on shrimp (raw or cooked)
  • 0.5 red onion, sliced
  • 0.5 carrot, thinly sliced into rounds
  • 1 lemon, thinly sliced
  • 0.5 small bulb fennel, sliced (fronds included)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh dill
  • 2 sprigs parsley
  • 2 cloves garlic, halved
  • 12.78g capers (juice included)
  • 118.29ml cider vinegar or white wine vinegar
  • 59.15ml olive oil
  • Salt to taste
  • Pinch white pepper
  • Pinch red pepper flakes

Preparation
STEP 1

If using raw, poach shrimp before starting (instructions below in notes) or add cooked shrimp to a large bowl.

STEP 2

To the shrimp add, onion, carrot, fennel, thyme, dill, parsley, garlic, capers, vinegar, olive oil, and salt. Taste marinade for seasoning and adjust if needed.

STEP 3

In a large (1 quart) jar or other large sealable container, layer ingredients so all are covered by liquid. Press plastic wrap down onto top of food to ensure everything is covered by liquid.

STEP 4

Place in refrigerator and chill overnight or up to 12 hours.

STEP 5

Pour into a bowl and serve as an appetizer with toothpicks, on crackers or on a bed of greens.

Options

To poach shrimp: Bring a pot of water (about 3 quarts) to a boil with 1/2 a lemon, 1 teaspoon peppercorns, 1 bay leaf, and 1 teaspoon of salt. Reduce to a simmer. Add shrimp and cook for about 2-3 minutes or until shrimp are pink and just cooked through. Drain in a colander. Spread in shallow dish and place in the freezer for 10-15 minutes, or until chilled. Refrigerate until ready to enjoy. Can be prepared one day ahead.

Try adding Cajun or Old Bay seasoning, a spice blend of your choice, or spice things up by with a sliced chili pepper!
