- 1 Our Own pizza dough ball (proofed to room temperature) or 2- 12” premade pizza crusts
- 3 tablespoons butter
- 1 teaspoon minced garlic
- 2 cups sliced mixed mushrooms (cremini, shiitake, oyster, chanterelle, etc)
- 1 tablespoon chopped fresh herbs (such as rosemary, thyme, oregano, parsley)
- 3 cups shredded mozzarella
- Pinch of red pepper flakes
- Optional toppings:
- Sliced kale, arugula, or spinach
- Sliced red onion
- Roasted garlic cloves
- Sliced peppadew peppers
- Balsamic glaze
- Lemon zest

When seasonal wild mushrooms hit the shelf, they’re irresistible to pass up. Here we showcase them with an all-around delicious pizza! Make it your own with the optional suggestions.
Preheat oven to 425°F. If using baking stone heat with oven.
Melt butter in a large skillet over medium high heat. Add minced garlic and mushrooms. Cook until mushrooms start to brown and soften, about 5 minutes. Season with salt and pepper and minced fresh herbs. Set aside to cool.
On a floured surface, divide dough ball in half and stretch into 2- 12” round pizzas. (Building on parchment paper can be helpful for transferring later).
Drizzle pizza crust with olive oil. Add half of the shredded mozzarella to each pizza. Top with cooked mushrooms, a pinch of red pepper flakes, and additional toppings if using.
Bake pizza on baking sheet or pizza stone for 12-15 minutes until crust is golden brown and cheese is melted.
For extra taste try using a flavored olive oil such as garlic, basil, Italian herb, shallot, mushroom, or truffle. If you enjoy a very creamy pizza substitute alfredo sauce for the olive oil.
If you are looking for flavor more unique than mozzarella, try shredded Fontina, Gouda, Gruyere, or even Brie or Goat cheese.
