Mediterranean Sheet Pan Gnocchi and Vegetables

- 1 pound gnocchi (fresh, frozen or shelf-stable)
- 4 cups vegetables of choice, cut into one-inch pieces (red onion, bell peppers, cherry tomatoes, green beans, eggplant, zucchini, Brussels sprouts, broccoli, cauliflower, asparagus, fennel)
- 2 cloves garlic, finely minced or grated
- 1 lemon, cut in half, divided
- 2 teaspoons dried Greek oregano (or 2 tablespoons fresh)
- 1 teaspoon dried basil (or one tablespoon fresh)
- 1 teaspoon salt
- Pinch of red pepper flakes or black pepper
- ⅓ cup olive oil
- 1 (5-ounce) package baby spinach or arugula
- ⅓ cup crumbled feta, mizithra, ricotta salata or goat cheese
- 453.59g gnocchi (fresh, frozen or shelf-stable)
- 946.35ml vegetables of choice, cut into one-inch pieces (red onion, bell peppers, cherry tomatoes, green beans, eggplant, zucchini, Brussels sprouts, broccoli, cauliflower, asparagus, fennel)
- 2 cloves garlic, finely minced or grated
- 1 lemon, cut in half, divided
- 8.52g dried Greek oregano (or 2 tablespoons fresh)
- 4.26g dried basil (or one tablespoon fresh)
- 4.26g salt
- Pinch of red pepper flakes or black pepper
- 78.86ml olive oil
- 1 (5-ounce) package baby spinach or arugula
- 78.86ml crumbled feta, mizithra, ricotta salata or goat cheese
Toss it all together and let the oven do the magic! In 30 minutes you’ll have a bowl full of beautiful glistening caramelized veggies and gnocchi bathed in cheese and herbs.
Preheat oven to 400°F.
In a large bowl combine gnocchi and vegetables. Add garlic, juice of 1/2 lemon, herbs, salt, pepper flakes or black pepper and olive oil and toss to coat.
Pour mixture onto a baking sheet (covered with foil or parchment paper) and arrange in an even layer. Place in oven and roast for 25 minutes.
Remove from oven, add spinach and toss to combine. Place back in oven and roast for 5 more minutes.
Remove from oven, squeeze other half of lemon over sheet pan and sprinkle with feta or goat cheese crumbles. Taste and add more salt, pepper or olive oil as desired and enjoy warm or at room temperature.
To make this more substantial, you can add Italian sausage or cut chicken breasts to the pan at the beginning. To make this recipe even easier, substitute an Italian vinaigrette for the oil, seasonings and lemon.
