These small fried cornmeal-based dough balls, also referred to as red horse bread, are delightfully crunchy on the outside and savory and chewy on the inside. Traditionally served as a side dish with seafood.
Ingredients
  • ¼ cup buttermilk
  • 1 egg
  • ½ cup yellow cornmeal
  • ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon 1 teaspoon onion powder
  • 1 teaspoon dried onion flakes
  • 1 teaspoon kosher salt
  • Canola or Vegetable oil for frying
  • 59.15ml buttermilk
  • 1 egg
  • 118.29ml yellow cornmeal
  • 59.15ml all-purpose flour
  • 4.26g baking powder
  • 4.26g garlic powder
  • 4.26g 1 teaspoon onion powder
  • 4.26g dried onion flakes
  • 4.26g kosher salt
  • Canola or Vegetable oil for frying

Preparation
STEP 1

Combine the buttermilk and egg in a bowl.

STEP 2

Combine cornmeal, flour, spices, and salt in another large bowl.

STEP 3

Add the buttermilk/egg mixture to the large bowl and stir to combine. The mixture should be thick.

STEP 4

Heat a few inches of oil in a pan or fryer and drop 1/2-tablespoon sized dollops of batter into the hot oil. Fry until golden brown and remove from oil to paper towel lined plate. Lightly sprinkle with salt.

STEP 5

Serve with dipping sauces (tartar sauce, cocktail sauce, remoulade or ketchup).
