- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon chai spice blend (see recipe)
- 2 large eggs
- ¼ cup sour cream or Greek yogurt
- 1 cup packed light brown sugar
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 ½ cups finely grated carrots
- ½ cup chopped pecans or walnuts, optional
- Brown Butter Chai Cream Cheese Glaze:
- 4 tablespoons unsalted butter
- 4 ounces cream cheese, softened
- ¾ cup powdered sugar
- ½ teaspoon chai spice blend
- ½ teaspoon vanilla extract
- Pinch of salt
- 1–2 tablespoons milk, as needed

- 113.4g cream cheese, softened
- 177.44ml powdered sugar
- 2.13g chai spice blend
- 2.13g vanilla extract

Preparation
STEP 1
Preheat oven to 350°F. Grease a 9-by-5-inch loaf pan and line with parchment paper, leaving some overhang for easy removal.
STEP 2
In a medium bowl, whisk together the flour, baking soda, baking powder, salt and chai spice blend.
STEP 3
In a large bowl, whisk the eggs, sour cream or yogurt, brown sugar, oil and vanilla until smooth.
STEP 4
Add the dry ingredients to the wet ingredients and stir just until combined. Fold in the grated carrots and nuts, if using. Do not overmix.
STEP 5
Transfer the batter to the prepared loaf pan and smooth the top. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
STEP 6
While the bread cools, melt the butter in a small saucepan over medium heat. Continue cooking, swirling occasionally, until the butter is golden brown and smells nutty. Remove from the heat and let cool slightly.
STEP 7
Beat the softened cream cheese until smooth. Add the powdered sugar, chai spice blend, vanilla, browned butter and pinch of salt, and beat until smooth. Add milk, 1 tablespoon at a time, until the glaze reaches a thick but pourable consistency.
STEP 8
Drizzle the glaze over the cooled carrot bread. Let the glaze set for a few minutes before slicing.
