Originating in Tijuana, Mexico Caesar salad is a beloved favorite due to its flavorful dressing of anchovy, garlic and parmesan.
Ingredients
  • 4 anchovy fillets packed in oil
  • 1 clove garlic
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 2 tablespoons lemon juice
  • ½ cup olive oil
  • ¼ cup grated parmesan cheese
  • Salt and freshly ground black pepper
  • 4 anchovy fillets packed in oil
  • 1 clove garlic
  • 1 egg yolk
  • 4.26g Dijon mustard
  • 25.56g lemon juice
  • 118.29ml olive oil
  • 59.15ml grated parmesan cheese
  • Salt and freshly ground black pepper

Preparation
STEP 1

Either with a knife or in a food processor chop anchovies and garlic together to form a paste. Continue working in food processor or transfer to a bowl.

STEP 2

Add egg yolk, Dijon mustard and lemon juice. Mix or whisk to combine.

STEP 3

Slowly stream in olive oil while constantly whisking to form an emulsified dressing.

STEP 4

Stir in parmesan cheese. Add salt and black pepper to taste. Store in the refrigerator until ready to serve.
