Ingredients
- 4 (6 ounces) firm flesh fish fillets
- ¼ cup oil
- ¼ cup soy sauce
- ¼ cup freshly squeezed lemon juice
- 1 teaspoon grated lemon zest
- 1 clove crushed garlic
- 1 tablespoon minced fresh parsley
- Avocado Butter:
- ¼ cup butter, softened
- ½ ripe avocado, mashed
- 3 tablespoons freshly squeezed lemon juice
- 2 tablespoons minced fresh parsley
- 2 cloves garlic, minced
- Salt to taste
- 4 (170.1g) firm flesh fish fillets
- 59.15ml oil
- 59.15ml soy sauce
- 59.15ml freshly squeezed lemon juice
- 4.26g grated lemon zest
- 1 clove crushed garlic
- 12.78g minced fresh parsley
- Avocado Butter:
- 59.15ml butter, softened
- 0.5 ripe avocado, mashed
- 38.34g freshly squeezed lemon juice
- 25.56g minced fresh parsley
- 2 cloves garlic, minced
- Salt to taste
The combination of fish with avocado butter is super satisfying while being full of good-for-you fats and vitamins. Remember to plan the time to marinate your fish!
Preparation
STEP 1
Place fish in a shallow dish. In a small bowl, combine oil, soy sauce, lemon juice and zest, garlic and parsley. Pour over fish. Coat both sides and marinate up to 1 hour.
STEP 2
In a small bowl, beat butter until soft. Mix in avocado, lemon juice, parsley and garlic. Season with salt to taste. Cover and refrigerate until ready to serve.
STEP 3
Drain fish, reserving marinade. Either broil in the oven or grill over hot fire, 10-12 minutes per inch of thickness, turning once and brushing often with marinade.
STEP 4
Transfer fish to plates and top each with a dollop of avocado butter. Garnish with lemon wedges, if desired.
