Ingredients
  • 1 bunch broccoli rabe (rapini), cleaned and chopped into 1–2 inch pieces
  • 4 tablespoons olive oil, divided
  • 1 clove garlic, sliced
  • Pinch of kosher or sea salt
  • Red pepper flakes
  • ¼ cup chicken stock (or water)
  • Juice of ½ lemon
  • 2 chewy rolls of choice (ciabatta, bolo, torta) cut in half or 4 slices of hearty artisan bread
  • ½ cup roasted red pepper
  • 1 ball fresh mozzarella or 6 ounces provolone, sliced
  • Balsamic vinegar (optional)

  • 118.29ml roasted red pepper
  • 1 ball fresh mozzarella or 6 ounces provolone, sliced
  • Balsamic vinegar (optional)

Preparation
STEP 1

In a large skillet over medium high heat, sauté broccoli rabe in half of the olive oil. When rabe is just beginning to lightly brown add garlic and a pinch each of salt and red pepper flakes.

STEP 2

Add chicken stock, cover and turn down heat to simmer. Cook until broccoli rabe is knife tender, about 6-7 minutes. Add juice from ½ a lemon and stir.

STEP 3

Toast sandwich tops and bottoms lightly under a broiler or in a toaster. Place roasted red pepper on sandwich bottoms. Top with broccoli rabe then sliced mozzarella. Drizzle with balsamic if using, remaining olive oil and sprinkle with additional salt. Place top on sandwich and press.

  • Lightly dressed greens such as spinach, arugula or cress added on after the cheese

  • Grilled eggplant, chicken or steak

  • Roast pork, soprasetta or cooked Italian sausage

  • Hummus, baba ghanoush, tahini, white beans or pesto

This sandwich is also delicious toasted until melty in your oven or panini press.
