Korean comfort food at its finest, with creamy egg carrying a mélange of savory, spicy, sweet and pickled flavors.
Ingredients
  • ½ pound thinly sliced beef
  • ¼ cup plus 1 tablespoon kalbi or bulgogi marinade
  • ¼ cup gochujang (red chili paste)
  • ½ teaspoon sesame seeds
  • 2 teaspoons honey
  • 1 teaspoon plus 2 tablespoons sesame oil
  • 1 garlic clove, minced
  • 2 tablespoons vegetable oil
  • 4 cups spinach
  • 2 carrots, julienned or grated
  • 1 ½ cups mung bean sprouts
  • 6 fresh shitake mushrooms, stemmed and sliced
  • 2 cups warm, cooked white rice
  • 4 eggs, fried
  • Kimchee, cut into thin strips
  • 226.8g thinly sliced beef
  • 59.15ml plus 1 tablespoon kalbi or bulgogi marinade
  • 59.15ml gochujang (red chili paste)
  • 2.13g sesame seeds
  • 8.52g honey
  • 4.26g plus 2 tablespoons sesame oil
  • 1 garlic clove, minced
  • 25.56g vegetable oil
  • 946.35ml spinach
  • 2 carrots, julienned or grated
  • 354.88ml mung bean sprouts
  • 6 fresh shitake mushrooms, stemmed and sliced
  • 473.18ml warm, cooked white rice
  • 4 eggs, fried
  • Kimchee, cut into thin strips

Preparation
STEP 1

Combine beef and marinade. Cover and refrigerate for 30 minutes.

STEP 2

To create pepper sauce, combine gochujang, sesame seeds, honey, 1 teaspoon sesame oil and minced garlic. Set aside.

STEP 3

Heat a wok over medium-high heat. Combine 2 tablespoons each sesame and vegetable oils and put about a tablespoon into the wok. Add spinach and toss until wilted. Remove from wok and set aside.

STEP 4

Add a little more oil to wok. Add carrots and stir-fry until just tender, about 2-3 minutes. Remove from wok and set aside.

STEP 5

Repeat with bean sprouts, just until slightly wilted and set aside.

STEP 6

Add mushrooms and marinade to wok. Fry until tender, 3-5 minutes, set aside.

STEP 7

Carefully wipe wok clean. Add a little more oil and the beef. Stir-fry until just cooked through.

STEP 8

Divide cooked rice between four bowls. Place vegetables and beef in individual piles on rice. Top with a fried egg and kimchee. Serve with pepper sauce on the side.
