Ingredients
  • 1 (¼ ounce) pack active dry yeast
  • 1 ½ cups warm water (110°F)
  • 1 cup evaporated milk
  • ½ cup sugar
  • 2 eggs
  • 1 teaspoon salt
  • 7 cups all-purpose flour, divided
  • ¼ cup shortening
  • 1 quart vegetable oil for frying
  • ¼ cup confectioners' sugar
  • 1 (7.09g) pack active dry yeast
  • 354.88ml warm water (110°F)
  • 236.59ml evaporated milk
  • 118.29ml sugar
  • 2 eggs
  • 4.26g salt
  • 1656.12ml all-purpose flour, divided
  • 59.15ml shortening
  • 1.14L vegetable oil for frying
  • 59.15ml confectioners' sugar

Preparation
STEP 1

In a large bowl dissolve yeast in warm water.

STEP 2

Add evaporated milk, sugar, eggs, and salt. Stir to mix.

STEP 3

Add 4 cups flour and beat until smooth.

STEP 4

Mix in shortening. Then mix in remaining 3 cups flour.

STEP 5

Cover and refrigerate dough for at least 2 hours or up to 24 hours.

STEP 6

Roll dough out on floured surface to 1/8-inch thick. Cut into 2 1/2-inch squares.

STEP 7

Heat oil in a deep pot to 360° F.

STEP 8

Fry beignets in batches until browned and puffed. (If beignets sink and do not pop up, oil is not hot enough.) Remove from oil with a slotted spoon and drain on paper towels.

STEP 9

Shake confectioners' sugar over hot beignets. Serve immediately.
