Travel to New Orleans right in your very own kitchen with these irresistible homemade beignets. They are best eaten fresh and warm with a cup of coffee or hot chocolate.
Preparation
STEP 1
In a large bowl dissolve yeast in warm water.
STEP 2
Add evaporated milk, sugar, eggs, and salt. Stir to mix.
STEP 3
Add 4 cups flour and beat until smooth.
STEP 4
Mix in shortening. Then mix in remaining 3 cups flour.
STEP 5
Cover and refrigerate dough for at least 2 hours or up to 24 hours.
STEP 6
Roll dough out on floured surface to 1/8-inch thick. Cut into 2 1/2-inch squares.
STEP 7
Heat oil in a deep pot to 360° F.
STEP 8
Fry beignets in batches until browned and puffed. (If beignets sink and do not pop up, oil is not hot enough.) Remove from oil with a slotted spoon and drain on paper towels.
STEP 9
Shake confectioners' sugar over hot beignets. Serve immediately.
