Have extra apples? Turn them into PANCAKES! These scream breakfast but work great for the kids' lunches or as a side dish at dinner.
Ingredients
  • 2 cups coarsely grated apples of choice
  • 3 eggs, lightly beaten
  • ¾ cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon cinnamon, optional
  • 1 teaspoon sugar or honey
  • 2 tablespoons oil
  • Kosher salt and black pepper (optional)
  • 473.18ml coarsely grated apples of choice
  • 3 eggs, lightly beaten
  • 177.44ml flour
  • 4.26g baking powder
  • 4.26g salt
  • 2.13g cinnamon, optional
  • 4.26g sugar or honey
  • 25.56g oil
  • Kosher salt and black pepper (optional)

Preparation
STEP 1

Combine grated apple, eggs, flour, baking powder, salt, and sugar or honey. Heat a heavy skillet over medium-high heat. Add oil.

STEP 2

Drop spoonfuls of mixture in skillet. Spread into 3-inch cakes, about 1/4-inch thick. Fry until browned on bottom. Reduce heat to medium if needed, to prevent burning. Turn over and cook until crisp, 3-5 minutes. Drain briefly on paper towels.

STEP 3

Sprinkle with salt and pepper (if using) and serve with sour cream, maple syrup or jam. These also make a great side dish for chicken or pork.

Options

For a more "latke" style pancake, strain grated apple in a colander or cheesecloth to remove excess moisture and reduce flour to 1/3 cup.
