Some Like It Hot

Hatch chiles aren’t just any pepper. They’re grown exclusively in Hatch, New Mexico, where the unique mix of rich soil, hot days, and cool nights gives them their one-of-a-kind flavor. Think of them as the Champagne of the chile world — if it doesn’t come from Hatch, you can’t use the name.

If you’ve ever bitten into a smoky Hatch chile, you already know: this pepper is more than just produce — it’s a flavor obsession. The secret? Roasting the chiles, which elevates them from merely tasty to truly extraordinary. At our legendary live Hatch Chile Roast, we prepare them the way they were meant to be enjoyed: roasted over an open fire, just like they do in New Mexico.

Want to get in on the fun?

Join us 8 AM - 3 PM August 29 and 9 AM - 1 PM August 30 at our Poulsbo, Shoreline, and Mill Creek locations, buy a half or whole bushel of chiles, and we'll roast them for you on the spot. While you wait, snack on samples of Hatch bratwurst and take a stroll around the market to find more delicious Hatch-ified house-made products (like burgers, enchiladas, and mac and cheese).

Can't make it to this year's Roast, but still want that smoky goodness?

It's a cinch to roast chiles using a grill, stove, or oven.
