Ingredients
  • 1 cup mayonnaise
  • 1–2 roasted Hatch chiles, peeled, seeded and finely chopped
  • 1 garlic clove, finely grated
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • ¼ teaspoon ground cumin
  • Salt, to taste
  • 236.59ml mayonnaise
  • 1–2 roasted Hatch chiles, peeled, seeded and finely chopped
  • 1 garlic clove, finely grated
  • 12.78g fresh lime juice
  • 4.26g lime zest
  • 1.07g ground cumin
  • Salt, to taste

Preparation
STEP 1

In a medium bowl, combine mayonnaise, Hatch chiles, garlic, lime juice, lime zest and cumin.

STEP 2

Stir until well combined. Season with salt to taste.

STEP 3

Cover and refrigerate for at least 30 minutes to let the flavors develop.

Options
  • Use one chile for a milder aioli or two for more heat.

  • Spread it on burgers, sandwiches or tacos, or serve it alongside grilled chicken, shrimp, steak or vegetables.

  • Spoon it over roasted potatoes, grilled corn or a bowl of rice and beans for an easy flavor boost.
