Ingredients
- 1 cup mayonnaise
- 1–2 roasted Hatch chiles, peeled, seeded and finely chopped
- 1 garlic clove, finely grated
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- ¼ teaspoon ground cumin
- Salt, to taste

Grab some Hatch chiles and make a batch of this creamy, zesty aioli. It’s an easy way to bring New Mexico flavor to everyday meals and a great condiment to keep on hand.
Preparation
STEP 1
In a medium bowl, combine mayonnaise, Hatch chiles, garlic, lime juice, lime zest and cumin.
STEP 2
Stir until well combined. Season with salt to taste.
STEP 3
Cover and refrigerate for at least 30 minutes to let the flavors develop.
Options
Use one chile for a milder aioli or two for more heat.
Spread it on burgers, sandwiches or tacos, or serve it alongside grilled chicken, shrimp, steak or vegetables.
Spoon it over roasted potatoes, grilled corn or a bowl of rice and beans for an easy flavor boost.
