In this case, the flavor comes from the fruit of the longan tree, known as dragon’s eye - a sweet and succulent fruit native to Southeast Asia. After 6 months of aging in oak barrels, the floral notes come through, creating the perfect culinary vinegar, delicately sweetened with additional longan honey.
