Momokawa Ruby Sake
Momokawa Ruby is a smooth, soft, well-balanced tokubetsu junmai amaguchi sake. Tokubetsu means special which in t his case refers to the handcrafted koji rice-making process. Koji is the magical enzyme which converts the starch in the sake rice into glucose, which the proprietary SakeOne yeast consumes to produce alcohol during fermentation. Although an expensive and labor intensive process, SakeOne sakemasters believe handcrafting the koji rice is essential to creating an enjoyable Momokawa premium sake experience. Junmai means pure and natural with no sulfites or preservatives. Amaguchi means soft. SakeOne, with premium sake kura in Momoishi, Aomori, Japan (since 1856 ) and Forest Grove, Oregon, U.S.A. (since 1997) has been awarded 50 consecutive gold medals for sake excellence by Japan's leading Professional Sakemaster association. We suggest enjoying Momokawa Ruby with lightly prepared fish, chicken, pork, vegetarian, and Asian cuisine. But please, always serve slightly chilled or on the rocks.
