Ingredients
  • 2 tablespoons oil
  • 1 red pepper, chopped
  • 1 zucchini, diced
  • 1 yellow onion, chopped
  • 3 cloves garlic, chopped
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon mild chile powder
  • 2 teaspoons Mexican oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (28 ounces) can diced tomatoes with juice
  • 3 cups chicken stock
  • 3 cups chopped or shredded cooked chicken
  • 2 (15 ounces) cans black beans, drained and rinsed
  • 1 (15 ounces) can corn, drained
  • ¼ cup lime juice
  • ¼ cup chopped cilantro
  • 5 cups corn tortilla chips
  • 1 cup shredded queso fresco, cotija or Cheddar cheese
  • 1 cup sour cream
  • 25.56g oil
  • 1 red pepper, chopped

  • 1 (793.79g) can diced tomatoes with juice
  • 709.76ml chicken stock
  • 709.76ml chopped or shredded cooked chicken
  • 2 (425.24g) cans black beans, drained and rinsed
  • 1 (425.24g) can corn, drained
  • 59.15ml lime juice
  • 59.15ml chopped cilantro
  • 1182.94ml corn tortilla chips
  • 236.59ml shredded queso fresco, cotija or Cheddar cheese
  • 236.59ml sour cream

Preparation
STEP 1

In a large pot, heat oil over medium heat. Add red pepper, zucchini, onions, garlic, chipotle pepper and spices, including salt and pepper. Cook for 5-7 minutes to soften.

STEP 2

Add tomatoes, stock and chicken. Bring to slight boil, reduce heat to medium-low and simmer for 10 minutes to combine flavors.

STEP 3

Add beans, corn, lime juice and cilantro. Taste and adjust seasonings as needed.

STEP 4

Add chips in handfuls, crushing some. Stir to combine.

STEP 5

Serve immediately in bowls, garnished with cheese and sour cream, along with any or all suggested garnishes.
