Ingredients
  • 1 box T&C EveryDay Penne
  • Olive oil
  • 1 package (about 1 pound) boneless skinless chicken breasts, cut into chunks
  • ½ cup sliced sun-dried tomatoes packed in oil
  • 1 tablespoon minced garlic
  • 2 teaspoons dried Italian seasoning
  • 2-3 cups baby spinach
  • 1 cup chicken broth
  • ¾ cup plain Greek yogurt
  • ¾ cup cottage cheese
  • ½ cup Parmesan cheese
  • ¼ cup sliced fresh basil
  • Salt and pepper to taste
  • 1 box T&C EveryDay Penne
  • Olive oil
  • 1 package (about 1 pound) boneless skinless chicken breasts, cut into chunks
  • 118.29ml sliced sun-dried tomatoes packed in oil
  • 12.78g minced garlic
  • 8.52g dried Italian seasoning
  • 2-3 cups baby spinach
  • 236.59ml chicken broth
  • 177.44ml plain Greek yogurt
  • 177.44ml cottage cheese
  • 118.29ml Parmesan cheese
  • 59.15ml sliced fresh basil
  • Salt and pepper to taste

Preparation
STEP 1

Bring a large pot of salted water to a boil. Cook pasta per package instructions. Reserve ½ cup of pasta water before straining.

STEP 2

Heat a large skillet to medium-high heat. Coat with olive oil. Add chicken and season with salt and pepper. Cook until golden brown on all sides and mostly cooked through.

STEP 3

Reduce heat to medium-low and add sun-dried tomatoes, garlic, and Italian seasoning to pan. Cook until fragrant, about 1-2 minutes.

STEP 4

Add chicken broth to deglaze pan. Add spinach and cook until wilted.

STEP 5

Mix Greek yogurt and cottage cheese into the pan to build your sauce. Toss the cooked penne with the sauce, adding reserved pasta water as needed.

STEP 6

Off the heat, mix in the Parmesan cheese and basil. Season with salt and pepper to taste. Serve with extra Parmesan (because who doesn’t want extra Parmesan?)

Options

Note to Italian sausage lovers: This recipe also works well with sliced sausage in place of the chicken breast.
