Using a heart shape cookie cutter cut out the center of each slice of bread. Choose a size that is as large as possible without breaking the bread.
Heat a non-stick skillet to medium heat. Melt a good size dab of butter.
Add as many pieces as possible of bread into the pan that fit nicely (typically 2) along with the small heart cut outs. Toast bread in the butter. Once golden and toasted, flip.
Add a little more butter if needed. Crack egg and gently drop into the center hole of the cut-out toast. Cover pan and cook until egg whites are firm and the yolk is to desired doneness.
Season egg with salt and pepper and serve right away with little heart toast on the side.
We love the hearts, but you can use any shape cookie cutter you like or even a circle. Use a glass if you don't have any cookie cutters.
