- 8 thin slices Spam
- Butter
- 4 eggs, beaten
- 2 green onions, chopped
- Salt and pepper
- ΒΌ cup mayonnaise
- 1 teaspoon Sriracha
- 4 English Muffins, toasted

- Arugula

Level up your next breakfast with this Spam sandwich! A breakfast of champions that's delicious any time of day!
Preparation
STEP 1
Add sliced Spam to a cold non-stick skillet. Transfer to the stove to medium heat. Cook Spam until fat has rendered and slices are browned and crispy, about 3 minutes per side. Remove Spam from pan and set aside.
STEP 2
Add an extra tablespoon of butter to the pan if needed. Scramble eggs in fat with green onions to your desired doneness. Season with salt and pepper.
STEP 3
Mix mayonnaise with sriracha. Spread each side of toasted English muffin with a little sriracha mayo.
STEP 4
Add 2 slices of Spam onto each bottom half of muffin on a sheet pan and divide eggs over that. Top eggs with a slice of cheese.
STEP 5
Broil sandwiches for 1-2 minutes to melt cheese (optional).
STEP 6
Top with a small handful of arugula, replace the top half of the muffin and serve!
