Sardine and Avocado Tapas

Ingredients
- 1 (4.2-ounce) can sardines packed in olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 small clove garlic, minced
- 1 ripe avocado, diced
- ΒΌ cup flat-leaf parsley leaves (very loosely packed)
- Salt and freshly ground black pepper
- Smoked paprika to garnish
- 1 (4.2-ounce) can sardines packed in olive oil
- 25.56g freshly squeezed lemon juice

- 59.15ml flat-leaf parsley leaves (very loosely packed)

Sardines are packed with protein, calcium and healthy Omega-3 fats. They are deliciously served here as Spanish-inspired tapas.
Preparation
STEP 1
In a mixing bowl, combine sardines (with oil), lemon juice and garlic. Toss gently with a fork, breaking the sardines into small bite-sized chunks.
STEP 2
Add diced avocado and parsley leaves. Toss gently and season to taste with salt and pepper.
STEP 3
Sprinkle lightly with smoked paprika.
STEP 4
Serve with hearty crackers for a light tapa. To make it a meal, serve with crusty bread, over a bed of greens, or toss gently with angel hair pasta.
