- 1 ¼ cups panko breadcrumbs
- ¾ cup shredded Parmesan cheese
- 2 teaspoons minced fresh parsley or dried flakes, optional
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup mayonnaise
- 4 (226.8g) fillets of cod, rockfish, or halibut
- 295.74ml panko breadcrumbs
- 177.44ml shredded Parmesan cheese
- 8.52g minced fresh parsley or dried flakes, optional
- 2.13g salt
- 2.13g black pepper
- 118.29ml mayonnaise

Preparation
STEP 1
Preheat oven to 400°F.
STEP 2
In a medium bowl, mix the panko, Parmesan, parsley, salt and pepper.
STEP 3
Coat the fillets in mayonnaise and roll in panko mixture.
STEP 4
Place on a parchment lined baking sheet and bake 20-25 minutes or until golden brown.
