Ingredients
- 1 3- to 4-lb. beef roast (shoulder or chuck roast)
- 1 (.7 to 1 oz.) packet Italian dressing mix
- 4 tablespoons olive oil, divided
- 1 cup pepperoncini, sliced
- ½ cup juice from pepperoncini
- 1 quart beef broth, or enough to cover half of roast
- 1 3- to 4-lb. beef roast (shoulder or chuck roast)

- 51.12g olive oil, divided
- 236.59ml pepperoncini, sliced
- 118.29ml juice from pepperoncini
- 1.14L beef broth, or enough to cover half of roast
This super-easy recipe creates tender beef with a delicious punch of flavor from the Italian dressing mix for seasoning and the tangy spice of pepperoncini. You will be asked to make it again and again.
Preparation
STEP 1
Preheat oven to 325°F. Mix together dressing mix with 2 tablespoons of oil. Rub mixture on all sides of roast.
STEP 2
Heat remaining oil in a large deep skillet or Dutch oven and thoroughly brown meat.
STEP 3
Add pepperoncini, juice and broth to cover half of roast.
STEP 4
Roast for 2-2 ½ hours or until roast is as tender as desired (you cannot overcook).
STEP 5
Serve as a traditional pot roast or shred and make Italian beef sandwiches with melted provolone.
