Instant Pot Cheesy Chicken Pasta

- 1 pound boneless, skinless chicken breast
- 2 tablespoons unsalted butter
- 1 teaspoon paprika
- ½ teaspoon mustard powder
- Salt and pepper to taste
- 3 cups penne pasta
- 1 ½ cups chicken broth
- ¼ cup heavy cream
- ¼ cup grated parmesan
- 4 cups broccoli florets chopped into small pieces
- ½ cup grated cheddar cheese
- 453.59g boneless, skinless chicken breast
- 25.56g unsalted butter
- 4.26g paprika
- 2.13g mustard powder
- Salt and pepper to taste
- 709.76ml penne pasta
- 354.88ml chicken broth
- 59.15ml heavy cream
- 59.15ml grated parmesan
- 946.35ml broccoli florets chopped into small pieces
- 118.29ml grated cheddar cheese
Put your handy instant pot to use for a quick back to school dinner. Cheesy broccoli and chicken is sure to be a family crowd pleaser!
Set Instant Pot to sauté on high. Meanwhile, cut chicken breast into ½ inch cubes. When the pot is ready, stir in butter to melt. Add paprika and mustard powder stirring to cook until fragrant (about 30 seconds). Add chicken and salt and pepper to taste, stirring chicken until coated. Turn off pot.
Add penne, chicken broth and 1 cup hot water to Instant Pot. Put the lid on and lock the lid. Make sure the lid is sealed tight. Set the pot to pressure cook on high for 3 mins. When the timer goes off, carefully turn the steam valve to venting position and manually release the pressure. Turn off pot and open the lid.
Set Instant Pot to sauté on high. Bring to boil and stir well. Add heavy cream and parmesan. Stir until the sauce thickens for 2-3 min. Turn off pot, add broccoli and cheddar. Stir until the broccoli is bright green and cheddar is completely melted and smooth. Season to taste with salt and pepper.
