Stir-frying is a great way to whip up quick and healthy meals – and it’s not just for Asian flavors! These techniques work well with all kinds of ingredients. Experiment and find your favorite.

Stir-frying is a great way to whip up quick and healthy meals – and it’s not just for Asian flavors! These techniques work well with all kinds of ingredients. Experiment and find your favorite.

Preparation
STEP 1

Chop, slice and prepare all ingredients before you start cooking. If the sauce has multiple ingredients, combine them before you start to cook.

STEP 2

Cut meat in small, bite-sized pieces, and slice vegetables in bite-sized pieces on diagonal (extra surface area helps them cook more quickly).

STEP 3

Heat wok before adding oil (unless using non-stick). Drizzle oil down sides of wok for even coating and quick heating.

STEP 4

Flavor hot oil by quickly stirring in garlic, ginger and/or chili peppers, but take care to prevent burning.

STEP 5

If stir-fry includes meat, fry first until almost cooked through, then remove from wok. Work in batches to avoid over-crowding. Between batches, carefully wipe wok with a paper towel, add more oil if necessary and allow wok to get hot again.

STEP 6

Add vegetables according to cooking time (for example, add broccoli and carrots before leafy vegetables like bok choy or spinach).

STEP 7

Add meat back when vegetables are almost done, generally with sauce. Bring to just a simmer and enjoy immediately with steamed rice or your favorite noodles.

Options

Notes: If you have a ceramic cook top, it may be difficult to get the sides of a wok sufficiently hot to stir fry well. Try using a large, flat-bottomed sauté pan instead.
