Grilled Steak and Peach Salad

Ingredients
- 2 (8 ounces) steaks, your favorite cut
- 1 tablespoon chopped fresh rosemary
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 2 peaches, halved and pitted
- 4 cups mixed baby salad greens
- 2 green onions, thinly sliced
- ¼ cup fresh basil leaves, torn by hand
- Your favorite blue cheese dressing
- Crumbled blue cheese for garnish
- 2 (226.8g) steaks, your favorite cut
- 12.78g chopped fresh rosemary
- 25.56g olive oil
- Kosher salt and freshly ground black pepper
- 2 peaches, halved and pitted
- 946.35ml mixed baby salad greens
- 2 green onions, thinly sliced
- 59.15ml fresh basil leaves, torn by hand
- Your favorite blue cheese dressing
- Crumbled blue cheese for garnish
A great summer salad – take advantage peach season and use them in everything! Grilling peaches brings out their sweetness, balanced by savory steak and creamy blue cheese.
Preparation
STEP 1
Brush steaks generously with olive oil and rub with rosemary. Cover with plastic wrap and marinate at room temperature for 30 minutes.
STEP 2
Heat grill or grill pan to medium-high. Season steaks with salt and pepper and grill to desired doneness.
STEP 3
Remove to a cutting board and cover loosely with foil. Let stand for 10 minutes, then cut into thin slices against grain of meat.
STEP 4
While steak is resting, brush peaches with oil. Grill cut side down until lightly charred, 2-3 minutes. Remove and slice into wedges.
STEP 5
Toss greens, scallions and basil together in a bowl and divide on serving plates. Fan steak slices and peach wedges over top. Drizzle with dressing and garnish with crumbled cheese. Serve immediately.
