Grilled Steak and Peach Salad

A great summer salad – take advantage peach season and use them in everything! Grilling peaches brings out their sweetness, balanced by savory steak and creamy blue cheese.
Ingredients
  • 2 (8 ounces) steaks, your favorite cut
  • 1 tablespoon chopped fresh rosemary
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper
  • 2 peaches, halved and pitted
  • 4 cups mixed baby salad greens
  • 2 green onions, thinly sliced
  • ¼ cup fresh basil leaves, torn by hand
  • Your favorite blue cheese dressing
  • Crumbled blue cheese for garnish
  • 2 (226.8g) steaks, your favorite cut
  • 12.78g chopped fresh rosemary
  • 25.56g olive oil
  • Kosher salt and freshly ground black pepper
  • 2 peaches, halved and pitted
  • 946.35ml mixed baby salad greens
  • 2 green onions, thinly sliced
  • 59.15ml fresh basil leaves, torn by hand
  • Your favorite blue cheese dressing
  • Crumbled blue cheese for garnish

Preparation
STEP 1

Brush steaks generously with olive oil and rub with rosemary. Cover with plastic wrap and marinate at room temperature for 30 minutes.

STEP 2

Heat grill or grill pan to medium-high. Season steaks with salt and pepper and grill to desired doneness.

STEP 3

Remove to a cutting board and cover loosely with foil. Let stand for 10 minutes, then cut into thin slices against grain of meat.

STEP 4

While steak is resting, brush peaches with oil. Grill cut side down until lightly charred, 2-3 minutes. Remove and slice into wedges.

STEP 5

Toss greens, scallions and basil together in a bowl and divide on serving plates. Fan steak slices and peach wedges over top. Drizzle with dressing and garnish with crumbled cheese. Serve immediately.
