Fresh, bright, flavorful and fun – this dish is a great option to make something different on the grill!
Ingredients
  • ¼ cup butter
  • 3 cloves garlic, minced
  • 1-2 jalapenos minced
  • 1 cup diced pineapple
  • ½ red bell pepper, finely chopped
  • Juice and zest of 1 lime
  • 1 tablespoon honey, or to taste
  • 3 tablespoons chopped cilantro
  • 4 (6 ounces) fillets firm flesh fish such as opah, halibut, salmon, etc.
  • Salt and pepper to taste
  • Canola oil
  • 59.15ml butter
  • 3 cloves garlic, minced
  • 1-2 jalapenos minced
  • 236.59ml diced pineapple
  • 0.5 red bell pepper, finely chopped
  • Juice and zest of 1 lime
  • 12.78g honey, or to taste
  • 38.34g chopped cilantro
  • 4 (170.1g) fillets firm flesh fish such as opah, halibut, salmon, etc.
  • Salt and pepper to taste
  • Canola oil

Preparation
STEP 1

For salsa, heat a saucepan over medium-high heat. Add butter and heat until bubbly. Add garlic and jalapeno and sauté for 2 minutes or until fragrant. Add pineapple and sauté another 2 minutes. Add red pepper, lime and honey. Simmer for 1 minute to blend flavors. Sprinkle with cilantro and salt to taste. Set aside.

STEP 2

For fish, preheat your grill to medium. Mix together salt, pepper and oil and rub all over the surface of the fish. Cook fish about 10 minutes per inch of thickness or until cooked through. Top with your warm pineapple salsa and serve.
