A comforting Russian dish of tender strips of beef cooked in a sour cream sauce with mushrooms, onions and noodles. This version is ready in 30 minutes and packed with flavor.
Preparation
STEP 1
In a large skillet over medium-high heat, melt 2 tablespoons butter.
STEP 2
Season the steak strips with salt and pepper and sauté until browned and cooked to desired doneness. Do not over crowd the pan to achieve browning (you may have to work in batches). Remove from pan.
STEP 3
Add remaining 2 tablespoons butter and sauté mushrooms until browned and tender. Add onion and sauté 2 minutes.
STEP 4
Add the beef, wine, sour cream and nutmeg. Adjust seasonings to taste. Bring to a simmer, do not boil.
STEP 5
Serve hot over egg or spinach noodles and sprinkle with parsley if using.
