Dates with Peanut Butter and Chocolate

Dates are a great source of natural energy - paired with peanut butter, they become a fantastic healthy snack. Many fans of this sweet treat call them “nature’s candy bars”.
Ingredients
  • 12 Medjool dates
  • ⅓ cup peanut butter, crunchy or creamy (or almond, cashew, sunflower, hemp butter or tahini)
  • ½ cup dark or bittersweet chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil, optional
  • Flaky sea salt
  • 12 Medjool dates
  • 78.86ml peanut butter, crunchy or creamy (or almond, cashew, sunflower, hemp butter or tahini)
  • 118.29ml dark or bittersweet chocolate chips or chopped chocolate
  • 4.26g coconut oil, optional
  • Flaky sea salt

Preparation
STEP 1

Line a cookie sheet or platter lined with parchment paper.

STEP 2

If dates have pits, make a small slit in the side and remove the pit. If dates are pitted, make a small slit on side and open date slightly. Then spoon 1-2 teaspoons nut butter into each date and place on parchment paper.

STEP 3

Melt chocolate in microwave by heating 15 seconds at a time and stirring between each heating. Add coconut oil to chocolate if too thick. Dip stuffed dates halfway into melted chocolate and place on parchment. Alternatively, drizzle chocolate directly onto dates.

STEP 4

Sprinkle dates lightly with flaky sea salt then place in refrigerator for 15 minutes to allow chocolate to set.

Options

Try stuffing chopped walnuts or pistachios inside dates with butter. For a healthier twist, omit the chocolate and add pomegranate, chia, hemp seeds or coconut to the nut butter you are using. Semi-sweet, milk and white chocolate also work for this recipe but will result in a sweeter final product.
