- 2 tablespoons butter
- 2 cups sliced or chopped vegetables
- 6 eggs
- ¼ cup milk or cream
- ¼ cup grated parmesan cheese
- Salt and Pepper
- ¼ cup cooked chopped bacon, ham, or sausage (optional)
- ½ cup shredded or grated cheese (cheddar, jack, goat, feta, etc.)
- 2 tablespoons fresh chopped herbs (basil, parsley, dill, chives, chervil, cilantro, etc.)
- 25.56g butter
- 473.18ml sliced or chopped vegetables
- 6 eggs
- 59.15ml milk or cream
- 59.15ml grated parmesan cheese
- Salt and Pepper
- 59.15ml cooked chopped bacon, ham, or sausage (optional)
- 118.29ml shredded or grated cheese (cheddar, jack, goat, feta, etc.)
- 25.56g fresh chopped herbs (basil, parsley, dill, chives, chervil, cilantro, etc.)
Frittata is an Italian egg dish that is the ultimate clean-out-the -fridge or garden dish. Delicious eaten hot, room temp or cold. You can put just about anything into one and it can be eaten any time of day. So versatile!
In an oven safe pan (such as cast iron) over medium heat cook vegetables in butter. Season with salt and pepper.
In a bowl add eggs, milk, parmesan cheese, salt and pepper (and cooked bacon, ham or sausage if using). Beat well until fluffy.
Pour egg mixture over cooked vegetables. Stir gently, and add fresh herbs if using, then top with shredded cheese.
Start cooking on stove until just beginning to set, about 5 minutes, then transfer to broiler for 5 more minutes. Frittata will puff slightly and feel firm to the touch when done.
Almost any vegetables or cheeses work for a frittata. Use what you have or what you love! For an added flavor punch serve with a large scoop of drained sauerkraut, kimchi or other favorite fermented veg.
Frittatas can be made a variety of ways. Stove top is great using a well-seasoned cast iron skillet, then finished under the broiler. In the oven you can either use a well buttered baking dish (8x8 for the recipe size) or even in well-greased muffin tins!
If cooking in baking dish or muffin tin add egg mixture to vegetables then bake at 350˚F for about 15 minutes until set.
Delicious eaten on its own or with a salad and crunchy bread.
