This version of an Indian-style Butter chicken has it all – creaminess, richness and balanced flavor in each and every bite. Don’t forget the naan bread to soak up all that glorious sauce!
Ingredients
  • 4 tablespoons butter, divided
  • 1 yellow onion, chopped
  • 2 cups chopped Roma tomatoes
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 2 teaspoons chile powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon turmeric
  • 1 teaspoon salt
  • ½ cup cashew or almond butter
  • 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 4 pieces naan bread, cut into triangles
  • 2 cups cooked rice
  • 51.12g butter, divided
  • 1 yellow onion, chopped
  • 473.18ml chopped Roma tomatoes
  • 4.26g minced ginger
  • 4.26g minced garlic
  • 8.52g chile powder
  • 2.13g ground cinnamon
  • 1.07g turmeric
  • 4.26g salt
  • 118.29ml cashew or almond butter
  • 680.39g boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 4 pieces naan bread, cut into triangles
  • 473.18ml cooked rice

Preparation
STEP 1

Melt 2 tablespoons butter in a large skillet over medium heat and sauté onions until transparent.

STEP 2

Add tomatoes, ginger, garlic and spices; sauté 3 minutes.

STEP 3

Add nut butter and stir until thoroughly blended.

STEP 4

Add chicken and simmer until fully cooked, about 10 minutes.

STEP 5

Add remaining butter, stir and remove from heat. Serve over cooked rice with naan bread.
