Ingredients
- 4 tablespoons butter, divided
- 1 yellow onion, chopped
- 2 cups chopped Roma tomatoes
- 1 teaspoon minced ginger

- 1 teaspoon salt
- ½ cup cashew or almond butter
- 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 4 pieces naan bread, cut into triangles
- 2 cups cooked rice

This version of an Indian-style Butter chicken has it all – creaminess, richness and balanced flavor in each and every bite. Don’t forget the naan bread to soak up all that glorious sauce!
Preparation
STEP 1
Melt 2 tablespoons butter in a large skillet over medium heat and sauté onions until transparent.
STEP 2
Add tomatoes, ginger, garlic and spices; sauté 3 minutes.
STEP 3
Add nut butter and stir until thoroughly blended.
STEP 4
Add chicken and simmer until fully cooked, about 10 minutes.
STEP 5
Add remaining butter, stir and remove from heat. Serve over cooked rice with naan bread.
