A perfect dish for when you have guests for breakfast or brunch. You can make it the night before and just pop it in the oven so you can relax and enjoy your morning.
Ingredients
  • 1 pound bulk breakfast sausage (or Italian sausage or chorizo)
  • 2 tablespoons butter or olive oil
  • 1 large onion, chopped
  • 1 pound mushrooms, thinly sliced
  • 1 large loaf crusty artisan bread, cut into cubes (about 8-10 cups)
  • 2 cups grated cheese (Cheddar, Swiss, gouda, jack, mozzarella, etc.)
  • ½ cup grated Parmesan cheese
  • 12 eggs
  • 3 cups milk
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
  • 1 teaspoon salt
  • Fresh-ground black pepper
  • 2 tablespoons Dijon or whole grain mustard
  • Chopped fresh thyme to garnish
  • 453.59g bulk breakfast sausage (or Italian sausage or chorizo)

  • 473.18ml grated cheese (Cheddar, Swiss, gouda, jack, mozzarella, etc.)
  • 118.29ml grated Parmesan cheese
  • 12 eggs
  • 709.76ml milk
  • 12.78g chopped fresh thyme (or 1 teaspoon dried)
  • 4.26g salt
  • Fresh-ground black pepper
  • 25.56g Dijon or whole grain mustard
  • Chopped fresh thyme to garnish

Preparation
STEP 1

In a medium skillet, brown sausage until cooked. Remove to a bowl and drain excess fat from skillet. In same pan, sauté onions and mushrooms in butter until softened. Add drained sausage.

STEP 2

Arrange half the bread cubes in a prepared 9x13-inch baking dish. Spread meat mixture over bread and sprinkle with half of the cheeses. Top with remaining bread cubes and then with remaining cheeses.

STEP 3

In a bowl, whisk together eggs, milk, mustard, thyme and salt and pepper. Pour evenly over strata, pressing down on bread to coat.

STEP 4

Cover and chill at least 2 hours or overnight. Bake at 350°F for approximately 30 minutes covered. Uncover and bake for another 30 minutes until puffed and golden in the middle.

STEP 5

Allow to cool slightly, garnish with additional chopped thyme and serve.
