Maka Sushi

At each of our six markets, trained chefs craft Maka Sushi by hand everyday, taking pride in every roll. Every slice. Every piece. It’s never outsourced or mass-produced. This is sushi with standards. And it shows.

Our salmon is always wild-caught, never farmed. And our tuna? Sustainably caught, every time. (We won’t even consider serving eel until we can find a responsibly sourced option that meets our expectations.)

“We ran a nationwide search for a sushi company whose sustainability standards matched ours,” says Shauna Howell, Town & Country Market’s Director of Culinary Development & Services. “Partnering with Maka has been a breath of fresh air."

In addition to sustainability, Maka and T&C share a belief in clean, honest ingredients: no additives, preservatives, or artificial colors.

“What you don’t see is just as important as what you do see,” Shauna says. “No neon wasabi. No pink-dyed ginger. Even Maka soy sauce is made from scratch to skip the preservatives and cut excess sodium.”

You’ll find familiar favs (hello, spicy tuna) alongside our customer-requested, and quite popular, Spam musubi. And we love offering an ever-changing variety of chef-inspired Bento Boxes—enough to try something new every day of the week.

The name Maka is, like our sushi, a fusion of good Asian-inspired things. In Hawaiian, it means fresh. It also means beloved. And it kind of sounds like the Japanese word, “maha” which simply means “great.” And that’s what our sushi chefs hope you’ll think of their creations.
