With Purpose
Stretching across the wide-open landscapes of Idaho and Eastern Oregon, Desert Mountain brings together ten independent ranches. Each one is family-run, land-loving, and united by a bigger mission: to raise better beef and a better food future.
Stewards of Something Greater
“We’re proud to partner with Desert Mountain,” says Heather Bolewicki, Town & Country Markets Meat & Seafood Specialist. “In addition to being ethical and sustainable, all their farms maintain an impressively low carbon footprint.”
But sustainability alone isn’t enough to cross the finish line. So Desert Mountain goes further by practicing regenerative ranching with time-tested methods including rotational grazing, protecting water resources, rebuilding soil carbon, and creating spaces where wildlife can thrive.
These practices don’t just support the environment; they foster healthier ecosystems, grow more nutritious grass for the cattle, and reduce greenhouse gas emissions. It’s all part of a bigger goal: working with nature, not against it.
Care (The Quiet Work)
At Desert Mountain, animal welfare is a way of life. Cattle roam open pastures with access to clean water and shelter and are cared for gently by a compassionate team. The co-op believes that animals raised with care and respect produce better beef, and help shape a food system that’s more ethical, more sustainable, and more in tune with the values we all share.
And Why Akaushi Beef?
Akaushi beef, a Japanese red Wagyu breed, is prized for its intense marbling and naturally buttery texture.
At Desert Mountain, cattle are never given hormones or antibiotics, and are fed a natural, forage-based diet resulting in rich, clean flavor.
“Wagyu breeds have a fat profile closer to salmon than conventional beef,” Heather explains. “Paired with their grass-fed diet, these animals produce a remarkable flavor.”
When you choose Desert Mountain, you’re getting more than just exceptional beef. You’re supporting ranchers who care for the land and their animals, and are building a better food future, one bite at a time.
