Every Hatch chile has a story—and ours comes straight from the family behind The Hatch Chile Store.
For over five generations, the Mitchell family has been farming in the Hatch Valley of New Mexico, the chile capital of the world. Their roots trace back to Joseph Franzoy, the very first farmer to plant chiles here more than a century ago. Today, they still farm over 1,000 acres of that sun-soaked soil, producing the flavorful, fiery green chiles that have made Hatch famous.
At the helm is Preston Mitchell, who started selling fresh chiles online when he was just 15. With the help of his family, he bootstrapped one of the first farm-to-table businesses in the Hatch Valley, making it possible for chile fans everywhere to taste the magic.
Now, every pepper that makes its way to our markets carries that Hatch Valley heritage—and a whole lot of love. Whether you’re roasting them, stuffing them, or stirring them into stews, you’re enjoying the real deal: chile grown by people who live and breathe it.
