New Chapter for T&C Sushi

Earlier this year, we learned that our two long-term sushi vendors, Sushi Ko, which operates as a separate business in our Bainbridge and Poulsbo markets; and Sushi Fuku, which operates in our Mill Creek and Shoreline markets, are stepping away from their operations.

With this news, we went to work to find a sushi vendor with our same values and who is equally committed to local chefs and staff, sustainability and food safety. We are happy to announce that we are expanding our partnership with Sushi Avenue, which is already operating in our Ballard and Lakemont markets.

Sushi Avenue, like us, is a family-owned company who hires local sushi chefs and staff, with resources to train, certify and support the teams. The company, like many other sushi companies, serves other regions too, from its headquarters in Minnesota. We chose Sushi Ave for its unparalleled standards for food safety and quality, using sustainable and traceable seafood and compostable containers. They’re also dedicated to friendly customer service.

We are building a custom program with Sushi Avenue and will be able to offer additional hot and cold offerings along with a seasonal menu – fresh ahi, wild Pacific salmon and more. All the sushi is made on site throughout the day.

We’re excited about this next chapter, while wishing nothing but the best for Sushi Ko and Sushi Fuku. We truly appreciate the many years of working together.

Sushi Fuku will close its Shoreline and Mill Creek operations on Nov. 27.

Sushi Ko will close its Bainbridge Island operation on Dec. 15 and its Poulsbo operation on Dec. 31.

Our new sushi operations are scheduled to begin in Shoreline and Mill Creek in December, Bainbridge mid to late-December, and in Poulsbo in January 2022.
