Orange Rice

Serves 4-6


  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 cup diced sweet onions
  • Dash of cayenne
  • 2 1/4 cups long-grain rice
  • Juice and zest of 2 oranges
  • 3 3/4 cups chicken or vegetable broth
  • Salt and pepper


Heat the butter and oil in a medium saucepan. Add onion and dash of cayenne and sauté until onions are transparent. Add the rice and sauté an additional 2 or 3 minutes.
Add the orange juice, zest and broth. Cover and cook over low heat for 20-25 minutes or until rice is tender. Season to taste with salt and pepper.
