Pico de Gallo

Makes about 2 cups


  • 1 1/2 cups seeded, diced Roma tomatoes
  • 1/2 red onion, diced
  • 1-2 jalapenos, seeded and diced
  • 2 tablespoons oil
  • 2 cloves minced garlic
  • Juice of 2 limes
  • 1/4 cup cilantro leaves, chopped
  • Salt and pepper to taste


Combine all ingredients. Allow 2-3 hours for flavors to develop.
Pico de gallo, also called 'salsa fresco," is a Mexican condiment typically used much like you would use salsas or chutneys. Commonly, pico de gallo serves as a primary ingredient in fajitas and tacos.
