Goat Cheese Croutons

Makes 16 croutons


  • 16 thin (1/4 inch) slices of French baguette
  • 2 garlic cloves, finely minced
  • 1 cup crumbled goat cheese
  • 1 tablespoon extra virgin olive oil


Preheat oven to 400°F.
Place bread slices on a cookie sheet and bake for about 5 minutes or until lightly toasted. Cool on a wire rack.
Mix goat cheese with the garlic and olive oil. Spread goat cheese mixture onto toasts and bake in oven for about 8 minutes or until cheese is bubbly.
In place of the garlic and olive oil, you can add 2 tablespoons basil or tomato pesto.

Serve as an appetizer with olives and antipasto or enjoy with your favorite soup.
