Melon Salad

Serves 4


  • 4 cups ice cold diced melon of your choice
  • 1/4 cup fresh mint, chopped
  • 1/3 cup crumbled feta
  • Dressing:
  • 1-2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Dash cayenne, or to taste


Add melon, mint and feta to a chilled bowl. Combine dressing ingredients and season to taste.
Pour dressing over salad and gently toss to coat.
