Green Chile Breakfast Burrito

Makes 16 small burritos


  • 1 pound ground sausage
  • 6 eggs
  • 4 ounces queso fresco or grated Jack cheese
  • 1 cup roasted green chiles
  • 1 avocado, sliced
  • 16 corn tortillas


Wrap tortillas in foil and warm in a 400°F oven.
Cook sausage in a skillet over medium heat. Drain on plate lined with paper towels (leave burner on). Beat eggs and pour into warm skillet with remaining drippings from sausage. Scramble eggs in the skillet until almost cooked; add cheese. Gently add cooked sausage.

To serve, fill warm tortillas with sausage-egg mixture and top with roasted chiles and avocado. Serve immediately.
