Spicy Pineapple Jam

Makes 2-3 cups


  • 1 large fresh pineapple
  • 1/2 cup of water
  • 3 cups of white sugar
  • 2 teaspoons red pepper flakes
  • 1/2 cup lime juice


Cut rind and core from pineapple and dice into small pieces.
Add pineapple and water to a saucepan and cook on medium heat for 25-30 minutes. Add the sugar, red pepper flakes and lime juice and stir to combine.
Cook another 45-60 minutes until very thick, stirring often.
