- 4 cups ice cold diced melon of your choice
- 1/4 cup fresh mint, chopped
- 1/3 cup crumbled feta
- 1-2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt to taste
- Dash cayenne, or to taste
Add melon, mint and feta to a chilled bowl. Combine dressing ingredients and season to taste.
Pour dressing over salad and gently toss to coat.
