Turkey Wraps with Apricot Curry Sauce

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup apricot preserves, chopped
  • 2 teaspoons curry powder, or to taste
  • 8 thin slices deli turkey (or chicken or ham)
  • 1 1/2 cups coleslaw mix, or chopped cabbage
  • 4 whole wheat flour tortillas

Directions

Mix together mayonnaise, apricot preserves and curry powder.
Spread 2 tablespoons down center of each tortilla.
Top with 2 turkey slices and coleslaw mix.
Roll up and serve.
Can be cut into 1 1/2-inch slices for appetizers.
