  • Olive oil
  • 1 tablespoon of seasoning or rub of your choice
  • 1 beef steak, about 12 ounces (New York, T-bone, tenderloin, top sirloin, porterhouse, Spencer or rib-eye)


Preheat oven to 400°F.
Blend oil and seasoning or rub to form a thick paste. Coat both sides of steak.
Heat a heavy frying pan over high heat. Add a small amount of oil to pan and heat until shimmering.
Add steak and sear well on both sides, 1-2 minutes per side. Steak should be crispy and very brown.
Transfer to an ovenproof dish and finish in oven for 5-7 minutes, depending on thickness of steak.
Remove from oven when internal temperature reaches 130°F for rare or 140°F for medium-rare.
Let rest for 5 minutes before serving.
