Soba Noodle Salad with Shrimp and Calamari

  • 1/4 cup dried chopped seaweed, such as wakame
  • 1 bundle soba noodles
  • 1/2 pound medium shrimp or prawns, peeled, deveined
  • 1/2 pound calamari rings
  • 2 tablespoons finely sliced scallions
  • Dressing:
  • 3 tablespoons sesame oil
  • 1/4 cup mirin
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 2 tablespoons rice wine vinegar
  • Squeeze of lime juice, to taste
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped cilantro


Soak seaweed in lukewarmwater until soft, about 5 minutes.
Drain and squeeze out all water.
Cook noodles according to package directions.
Add shrimp to cooking water 3 minutes before noodles are done.
Add calamari 1 minute before noodles are done.
Drain and rinse under cold water.
Transfer to a serving bowl and add seaweed and scallions.
Whisk together dressing and toss with salad.

You may also use rice noodles in this dish. The cooking time is about 3 minutes, so add shrimp with noodles, cook for 2 minutes and then add calamari.
