  • 1 teaspoon-plus olive oil
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tablespoon chopped garlic
  • 1-2 teaspoons chipotle powder
  • 1 teaspoon ground cumin
  • 1 teaspoon lime zest
  • 1 can black beans, rinsed and drained
  • 1 small handful cilantro
  • 2 teaspoons kosher salt
  • 1/2 teaspoons pepper
  • 1 egg
  • 1 cup panko
  • 1 cup cooked freekeh (1 1/4 cups water to 1 cup freekeh)

Directions

Heat oil in a skillet over medium heat. Add the onion and green pepper; cook for about 5 minutes or until tender. Add the garlic; cook for 2 minutes. Add the chipotle powder and cumin. Cook until fragrant (about 1 minute). Remove from pan and let cool slightly.
Put the onion mixture, lime zest, beans, cilantro, salt, pepper and egg in the bowl of a food processor. Pulse to combine (mix should be a little chunky). Transfer to a bowl and add the panko and freekeh; stir to combine.
Create a small patty and cook in a skillet on medium heat coated with oil for 4-6 minutes per side or until cooked through and crispy brown. Taste. Adjust seasonings in the remaining mixture. Refrigerate remaining mixture for 30 minutes.
Form into about six patties and cook as above.

    What is freekeh?

  2. Town & Country Markets says:

Freekeh is basically roasted green wheat – an ancient food that is enjoying a resurgence in popularity thanks to its nutritional attributes. A lot of people are using it in place of white rice or couscous because it’s much higher in protein, a great source of fiber and has a low glycemic index. Freekeh is right up there with farro and quinoa, ancient grains making a remarkable comeback. All three of these are available in our Bulk Foods departments.
